Crock Pot Black Beans And Rice Recipe
2 (12-14 oz) cans black beans, drained and rinsed
1 (12-14 oz) can pinto beans (any bean is fine)
2 cups rice (uncooked)
2 cups water
1 jar salsa (I use the whole jar) It is so good but you can use a partial jar and leave the rest to put on top with the sour cream, just before serving.
2 tsp cumin
1 tsp chili powder
1 tsp garlic powder
1 tsp onion powder
1 tbs dried onion (spice isle)
1/2 tsp garlic pepper
1 tsp parsley
1/4 tsp black pepper
Sour Cream (for topping)
In your crock pot, stir together beans, rice, water, salsa, cumin, chili powder, garlic powder, onion powder, dried onion, garlic pepper, pepper, and parsley. Cover and cook on low for 3 hours. Serve with Sour Cream.
Note: You can use this filling for tacos, burritos, or to put on a salad using either, lettuce, spinach leaves, or a cabbage leaf.
